Raithane Bali Exhibition 2023: A Celebration of Indigenous Grains

"Kathmandu Fresh Bakery Pokhara Proudly Presents: 'Raithane Baking Exhibition' - Uniting Indigenous Grains, Local Entrepreneurs, and Sustainable Agriculture"

In 14 Oct 2023, celebrated as the International Millet Year, Kathmandu Fresh Bakery had the honor of organizing the Raithane Bali exhibition. This groundbreaking event was held in collaboration with the Minister of Nepal, the Minister of Agriculture and Livestock, and esteemed local entrepreneurs likeSNS Dairy, Farmers Bazaar, Doodhsala, and Doodhwala.

Our esteemed executive chef, Mr. Lokender Yonjan, led the initiative under the auspices of the Kathmandu Bakery Hotel Training Centre and Kathmandu Fresh Bakery. The exhibition was proposed by Mr. Sandeep KC and we showcased the innovative use of indigenous grains, including millet, oats, buckwheat, barley, phaphar, corn in creating more than 30 varieties of bakery items. These ranged from millet bread, pizza, and momos to buckwheat cookies, phaphar muffins, cakes, pancakes, and more.

The event aimed to empower local farmers by demonstrating how low-value grains could be transformed into high-value bakery products. With consumer preferences increasingly shifting towards organic and health-conscious options, these indigenous grains present a vital opportunity for Nepal's agricultural sector.

The Raithane Bali exhibition not only highlighted the nutritional and organic benefits of these grains but also showcased their potential for export. By producing and promoting these grains, local farmers can tap into the growing global demand for organic products.

We are immensely proud of the success of the Raithane Bali exhibition. The positive reception from attendees affirmed the uniqueness and importance of our initiative. This event marks a significant step towards empowering local farmers and promoting sustainable agriculture in Nepal.

The exhibition was a remarkable demonstration of how the fusion of indigenous grains, local entrepreneurship, and government support can pave the way for a brighter future. Special thanks to Mr. Roshan Maharjan, the Owner of Kathmandu Fresh Bakery, and Ms. Unika Maharjan, the Marketing and Strategic Director, for their invaluable contributions. We are honored to have played a part in this vision, and we look forward to witnessing Pokhara's transformation into a global hub for hospitality education, attracting students and culinary enthusiasts from around the world.
